Chatpati biryani
ingridients-: basmati rice - 1 kg
chicken - 1 whole cut into pieces
Aaloo - 1/2 kg
tamater - 1/2 kg
lemon - 2-3
green chillies - 15
onions - 6 medium size
dahi - 1/2 kg
Aaloo bukhare - 1 chatank
Imli - 1/2 chatank
garam masala powder - 1 tea spoon
whole garam masala - ( tezpatta 2,long 8,kali mirch 12 dane,choti ilayechi 5,bari ilayechi 4, darcheeni kuch tukre )
safed zeera - 1 tea spoon
kati huwi lal mirch - as taste
dhania powder - 3 table spoon
Haldi - 1 tea spoon
adrak lahsun paste - 3 table spoon
hara dhania - 1 ghucha
pudeena - 1 ghucha
zarde ka rang - 1 tea spoon
kewra essence - 2 tea spoon
salt - as taste
Ghee - jitni zaroorat ho main to acha khasa dal deti hoon
Method
pyaz bareek kat ker brown ker len or tel se nikal ker paper per phaila den.chicken dho len.pyaz me se aadhi pyaz le ker dahi me mila ker pees len ( 4 table spoon dahi bacha len ) aadhe tamater gol or aadhe bareek kat len. hara dhaniya pudeena saaf ker len.imli or aaloo bukhare thore thore pani me alag alag bhigo den.2 lemons ke gol qatle kat len or ek lemon ka juice nikal ke alag rakh den.
Aaloo cheel ker aadhe aadhe tukro me kat len.ek degchi me pani bhar kerusme zarde ka rang itna milaen ke aaloo zard rang ke ho jayen isi pani me aaloo galne tak ubal len.phir chan ker ek taraf rakh den.
ek degchi me 1/2 cup ghee garam karen usme chicken dal ker halka sa bhoon len. phir usme salt,kati or pisi lal mirchen,dhaniya powder, haldi.adrak lehsun paste dal ker bhoone phir isme pyaz jo bachi huwi thi dal ker bhoone.aaloo bukhare pani me masal ker gooda nikal ker dal den.aadhe bareek kate tamater bhi dal de or itna bhoone ke sabkuch ek jan ho jaye.isme 2 bari ilayechi,5 long, 7 kali mirch,3 choti ilayechi bhi shamil ker den.jab khoob bhun jaye to thora pani dalen or mix ker ke chicken dhak ker gal jane tak dhak ker pakaen 5 minutes me chicken gal jayega.
1 bari degchi me itna pani dalen ke chawal aaram se ubal saken.is pani me salt,sabit hari mirch,garam masala,safed zeera or chund patte pudeena ke dal ker ubalal le aayen.ab isme 1/2 an hour tak bheege huwe chawal pani nithar ker dal den.aanch tez rakhen. jab chawal me ek kani reh jaye to chawal chalni me chan ke us per kahi kahi zarde ka rang chirak den.
ab isi degchi me ( jisme chawal ubale the ) halka sa ghee laga len. ab sabse pehle degchi me chawal dalen or phir chawalon per taiyar shuda chicken, uble aaloo, gol kate tamater,hari mirchen, hara kata dhaniya,pudeena,garam masala powder,lemon ke tukre, bachi huwi brown pyaz,imli ka garha pani,aaloo bukharon ka pani or zarde ka rang dal ker dobara chawalon ki teh lagayen. ab jo dahi bachaya tha usme kewra or zarde ka rang mila ker chawalo ke uper dal den or usperlemon juice dal ker 15 minutes dum per rakh den.pehle aanch tez rakhen taki bhap bane phir dheemi aanch ker den. jab taiyar ho jaye to halke hath se mila le or garam garam serve karen.
