Frnds main aapke saath ye dish share kerna chahti hoon jo eid per to zaroor banati hoon or mujhe or meri family ko bohat pasand hai...I hope ke aap logo ko bhi pasand aayegi..:)

Chatpati biryani
ingridients-: basmati rice - 1 kg
chicken - 1 whole cut into pieces
Aaloo - 1/2 kg
tamater - 1/2 kg
lemon - 2-3
green chillies - 15
onions - 6 medium size
dahi - 1/2 kg
Aaloo bukhare - 1 chatank
Imli - 1/2 chatank
garam masala powder - 1 tea spoon
whole garam masala - ( tezpatta 2,long 8,kali mirch 12 dane,choti ilayechi 5,bari ilayechi 4, darcheeni kuch tukre )
safed zeera - 1 tea spoon
kati huwi lal mirch - as taste
dhania powder - 3 table spoon
Haldi - 1 tea spoon
adrak lahsun paste - 3 table spoon
hara dhania - 1 ghucha
pudeena - 1 ghucha
zarde ka rang - 1 tea spoon
kewra essence - 2 tea spoon
salt - as taste
Ghee - jitni zaroorat ho main to acha khasa dal deti hoon

Method

pyaz bareek kat ker brown ker len or tel se nikal ker paper per phaila den.chicken dho len.pyaz me se aadhi pyaz le ker dahi me mila ker pees len ( 4 table spoon dahi bacha len ) aadhe tamater gol or aadhe bareek kat len. hara dhaniya pudeena saaf ker len.imli or aaloo bukhare thore thore pani me alag alag bhigo den.2 lemons ke gol qatle kat len or ek lemon ka juice nikal ke alag rakh den.
Aaloo cheel ker aadhe aadhe tukro me kat len.ek degchi me pani bhar kerusme zarde ka rang itna milaen ke aaloo zard rang ke ho jayen isi pani me aaloo galne tak ubal len.phir chan ker ek taraf rakh den.
ek degchi me 1/2 cup ghee garam karen usme chicken dal ker halka sa bhoon len. phir usme salt,kati or pisi lal mirchen,dhaniya powder, haldi.adrak lehsun paste dal ker bhoone phir isme pyaz jo bachi huwi thi dal ker bhoone.aaloo bukhare pani me masal ker gooda nikal ker dal den.aadhe bareek kate tamater bhi dal de or itna bhoone ke sabkuch ek jan ho jaye.isme 2 bari ilayechi,5 long, 7 kali mirch,3 choti ilayechi bhi shamil ker den.jab khoob bhun jaye to thora pani dalen or mix ker ke chicken dhak ker gal jane tak dhak ker pakaen 5 minutes me chicken gal jayega.
1 bari degchi me itna pani dalen ke chawal aaram se ubal saken.is pani me salt,sabit hari mirch,garam masala,safed zeera or chund patte pudeena ke dal ker ubalal le aayen.ab isme 1/2 an hour tak bheege huwe chawal pani nithar ker dal den.aanch tez rakhen. jab chawal me ek kani reh jaye to chawal chalni me chan ke us per kahi kahi zarde ka rang chirak den.
ab isi degchi me ( jisme chawal ubale the ) halka sa ghee laga len. ab sabse pehle degchi me chawal dalen or phir chawalon per taiyar shuda chicken, uble aaloo, gol kate tamater,hari mirchen, hara kata dhaniya,pudeena,garam masala powder,lemon ke tukre, bachi huwi brown pyaz,imli ka garha pani,aaloo bukharon ka pani or zarde ka rang dal ker dobara chawalon ki teh lagayen. ab jo dahi bachaya tha usme kewra or zarde ka rang mila ker chawalo ke uper dal den or usperlemon juice dal ker 15 minutes dum per rakh den.pehle aanch tez rakhen taki bhap bane phir dheemi aanch ker den. jab taiyar ho jaye to halke hath se mila le or garam garam serve karen.
Ho gai chatpati biryani taiyar
Ab bana ker taste kijiye or mujhe bataiye kesi bani ???

kabab chini just chutki bar
jaeful jawtre powder 1.t.spone
oil 3 t.spone
kaccha pappaya 2 t.spone

salt as u want.
.method.
sub say pehlay qeemay ka pani ache tara dry kar k ismay tamam masalay dal day,sat he brown pyaz ko crush kar k wo b dal day,or is ko hato say ache tara milaye kum say kum 10 mint tak,then isko sill battay par agar peecay to ziada acha teast aye ga,warna isko chopper may peec lay,tak qeema or tamam masalay yak jan hojaye,or isko kum say kum 4 gantay k lie,or ziada say ziada over night marenait karay,to bht acha teast aye ga,jub ap qeemay ko marenait karay to us time qeemay k center may rote ka tukra ruk k jalta howa queela rak day,or oper say 3 t.spone oil dal kar qeemay ko ache tara say smoke day day,
ab karhaye may 2 teb spone oil mazeeed dalay(note.qeemay ko marenat kartay waqt b hum nay 3 teb.spone oil dala ta,)or qeema dal kar bht halki anch par paknay k lie rak day,tore dair bar chamuch hila k qeemay ko aram say turn karay,
lijye mazaydar DUM KA QEEMA tayar hay,
garnishing k lie lambe kate huve adrak,lemon slice,or pyaz k ring rak kar serve karay...
note. qeemay ko pakatay waqt dehan day,or aram aram say chamach chalaye,ta k qeema jalnay na paye,q k usmay besan honay ki waja say qeema penday may jalde lag sakta hay.:D

Ingredients
  • 1/2 cup vermicelli
  • 1 liter milk​
  • 1/2 cup sugar​
  • 1/4 cup almonds, blanched and ground​
  • 1/4 cup pistachios ground​
  • 1tsp cardamom powder​
  • 1tsp oil​
  • Saffron a pinch​
Method
  • Cook the milk and sugar, when the milk starts to boil, add vermicelli and cook for 5 minutes.​
  • Add the rest of the ingredients, cook for 5 more minutes.​
  • Garnish it with nuts.​
  • serve hot or cold, as you like. Enjoy​

Bhunna Mutton


  • 3 lbs of mutton
  • 2 large onions (chopped)
  • 10 cloves of garlic
  • 1 small piece of ginger (julian cut)
  • 3 large tomatoes (chopped)
  • 5 pods of cardamom (hari illaichi)
  • 2 pods of black cardamom (Kali illaichi)
  • 1 medium cinnamon stick
  • 10 cloves
  • 1 tsp cumin seeds
  • 6 curry leaves
  • 2 tsp red pepper
  • 2 tsp salt
  • 1 tsp tumeric powder
  • 1 1/2 tsp coriander powder
  • 1 tsp crushed black pepper (not ground)
  • 1 tsp ground cumin
  • 5 green chillies (finely chopped)
  • 1 cup chopped cilantro (fresh coriander)
  • 2 lemons (sliced into small wedges)
  • 1 1/2 cups of oil



Method



  1. Add garlic, onion, curry leaves, cardamom, black cardamom, cinnamon, cloves and cumin seeds to the meat.
  2. Add 2 cups of water, bring to a boil and simmer on low heat until meat is tender.
  3. Add tomatoes, salt, red pepper, tumeric, coriander powder and oil.
  4. Cook on high heat to completely evaporate the liquids.
  5. Saute until meat is golden brown and gives off the oil.
  6. Add crushed black pepper, cumin powder, lemon wedges, cilantro, ginger and green chillies and stir to mix.
  7. Place the lid on the pot and leave covered for at least ten minutes before serving.
