¾ cups oil
4 large Onions, chopped
¼ kg Curd
1 kg Rice(30min soak)
4 Bay Leaves
1 ” piece Cinnamon
10 Cloves
6 Cardamoms
10 Pepper corns
1 bunch Garlic
2 tbsp. finnel seeds
2 tbsp Coriander Seeds
1 tsp Cumin Seed
salt 2 taste
Method:
step 1
boil the 1 kg mutton in 7 glass of water for half hour first add all the spices ,2 onions don't put the curd and oil.
step 2
when the mutton become tendor drain it and safe the stock(yakhni)

put vessel on the stove now add oil and 2oninos,mix spices and fry them after that put mutton in it cook for 2 min now add curd in it and cook until in water dry now after that add stock(yakhni) in it

now the water gets a perfect boil taste the salt of water and then put rice in it and cook them first for 5min on full flame then next 5min on slow flame now put the rice for 10min on simmer

now dish out the mutton yakhni pullao and serve with raita and enjoy the flavor and aroma

Ingredients:
1/2 kg Mutton bone marrow
2 Beef bone marrow
1/2 kg Rice
250 gm Yogurt
2 Onion
2-3 Green chilies
2 tbsp Ginger garlic paste
2-3 Bay leaves
2 Onions
4-5 Cloves
3-4 Cardamom
2-3 Cinnamon
1 tsp Cumin
1 tsp Black pepper chopped
1 tsp Black pepper
1/2 cup Ghee
to taste Salt
Method:
Heat the ghee in a pan , fry one chopped onion till they turn golden brown. Remove and place them on an absorbent paper.
Then fry the bay leaves, cardamom, cinnamon, clove and cumin in a same pan. Put mutton bone marrow with ginger garlic paste and water as required and fry until the mutton bone marrow tenders. Now separate the stock and discard the spices.
Heat the ghee in a separate pan and fry the remaining chopped onions until they turn light brown in color. Then add green chilies, yogurt, chopped black pepper, black pepper cloves and salt. Fry till the oil starts to separate.
Add the stock when it starts to boil add the fried mutton bone marrow, beef bone marrow and the rice.
Mix all the ingredients cover and simmer until the rice is done. Dish out and garnish with the brown onions .

Ingredients:
1 kg Mutton chops
1 kg Potatoes
2 Eggs
3 Green chilies
250 grams Cottage cheese
250 grams Bread crumbs
for frying Oil
1 tbsp Chicken cube’s flour
1 tbsp Red chili powder
1 tbsp Ginger garlic paste
1/2 tbsp Crushed black pepper
2 tbsp oil.
to taste Salt
Method:
Marinate 1kg mutton chops with 1 tbsp ginger garlic paste, 1 tbsp red chili powder, salt to taste and 1/4 tbsp crushed black pepper for half an hour. Then cook marinated mutton chops with 2 tbsp oil on low flame. Put off the flame when water dries up. Add 250 grams cottage cheese, salt to taste, 3 sliced green chilies, 1 tbsp chicken cubes’ flour and 1/4 tbsp crushed black pepper to 1 kg mashed potatoes.
Mix together all the ingredients. Cover the chops with potatoes mix so that only the bone remains uncovered. Dip in beaten eggs and coat with bread crumbs.
Deep fry chops in hot oil on low flame until they are golden brown. Place on an absorbent sheet and serve.

1 bunch Mint leaves
1 Onion chopped

1 tsp Cumin seeds
1 tsp Whole black pepper
1 tbsp Crushed red pepper
2 tbsp Pomegranate seeds
2 tbsp Whole coriander
to taste Salt
Method:
Chop 1 kg chicken mince well.Beat 3 eggs well and fry like
omelet. Keep aside.Grind together 2 tbsp whole coriander, 1 tsp black pepper
and 1 tsp cumin seeds.In a bowl put together chicken mince, 2 tbsp pomegranate
seeds, salt to taste, fried eggs, ground mixture of black pepper, 4 chopped
tomatoes, 4 chopped green chilies, 1 chopped onion, 1 bunch of chopped mint
leaves, 1 tbsp crushed red pepper and 1 cup corn meal. Mix well and keep aside
for few minutes.Make Pattie and fry in a frying pan with ghee or oil as
required.
Serve with Roghani Naan

Chop well. Now add 1/2 cup Rice flour and 1 Egg. Mix well and make long round kebabs. Lastly fry in hot oil till color turns to brown.

Yogurt 250 gm
Red Capsicum 1
Green Capsicum 1
Onion 2

Crushed red pepper 1 tsp
Chili powder 1 tsp
Turmeric 1 tsp
Butter 1 tbsp
Cumin crushed1 tbsp
Coriander crushed 1 tbsp
Coriander leaves 2 tbsp
Ginger Garlic paste 2 tbsp
Salt to taste

Method:

Heat ¼ cup oil in a pan, add ½ kg beef cubes and fry till golden brown.

Now add 2 tbsp ginger garlic paste and mix well.

In a bowl beat together 250 gm yogurt, 1 tsp crushed red pepper, 1 tsp chili powder, 1 tsp turmeric, 1 tbsp crushed coriander, salt to taste and ½ cup water.

Also add 2 chopped onion, 3 coarsley chopped tomatoes and salt to taste. Cover and cook for 15 – 20 minutes.

Now add 2 chopped green chilies, 1 red capsicum and 1 green capsicum cut into cubes.

Fry well on gihg flame.

Lastly add 2 tbsp coriander leaves and 1 tbsp butter. Dish it out and serve.

2 tbsp Raw papaya
for frying Oil

Ingredients for Chutney
250 gm Yogurt
1 Onion

1 tsp Cumin seeds
1/2 tsp Salt.
2 tbsp Coriander leaves
2 tbsp Mint leaves

Method:
1/2 kg Beef cubes with 1 tsp Chaat Masala, 1 tsp Chili powder, 1 tbsp chopped Garlic, 1/2 tsp Black pepper, 1/2 tsp Mustard paste, 2 tbsp Vinegar, 2 tbsp raw papaya and Salt to taste. Keep aside for 1 hour. Now dip in 4 beaten Eggs, roll in 1 cup Bread crumbs and deep fry till its color turn to golden brown.

Method for Chutney
In blender put together 250 gm Yogurt, 1 Onion, 1 Boiled potato, 3 cloves Garlic, 4 Green chilies, 1 tsp Cumin seeds, 1/2 tsp Salt, 2 tbsp Coriander leaves and 2 tbsp Mint leaves. Blend well and serve with Stick Botti.

Ingredients:

• 2 onions (finely diced)
• 1 bunch parsley (finely chopped)
• 2 tomatoes (very finely diced)
• 1 pinch each cumin powder, chilli flakes and salt
• 125ml water (salted)
• Oil (as required)
• 1 kg boneless lamb (very finely diced and boiled slightly)
• Hot pepper flakes
• 10 large pita breads

Method:
Mix together onions, parsley, tomatoes, cumin, chilli flakes and salt.
Use your hands and mix thoroughly. Set aside. Have a glass of lightly salted water nearby when you start cooking.
In a wide, deep frying pan, add enough oil to cover the base in a thin layer.
Heat oil, add meat and saute over medium heat.
After a few minutes, add hot pepper flakes. To ensure meat does not get too dry, keep sprinkling water from glass close by, but be very careful in case the oil splutters.
The moment you have used up all the water, cover the meat with the bread. When the bread has warmed through, remove from heat. Serve lamb with warm bread and onion mix.

1 cup Oil
1 cup Yogurt
few leaves Coriander leaves
6-8 Green chilies
1 tsp Cumin seeds
1 tsp All spice powder
1 tbsp Crushed red chili
2 tsp Ginger garlic paste
to taste Salt
Method:
Cut 1/2 kg meat in small cubes and marinate with salt, leave it for 2 hours. Heat 1 cup oil in pan and fry marinated meat cubes till golden brown. Now add 1 cup Yogurt, a pinch of Carom seeds, 1 tsp Cumin seeds, 1 tsp all spice powder, 1 tbsp Crushed red chili and 2 tbsp Ginger garlic paste. Cook over low flame for 30 minutes till meat tender. Turn the flame off, garnish with Coriander leaves and 6 to 8 Green chilies. Serve hot.

Ingredients:

Leg of Mutton 2 kg
Salt as per taste
Garam Masala Powder 2 1/2 tbsp
Yogurt 1 1/2 cup
Cooking Oil 1 1/2
cuGinger Garlic Paste 2 1/2 tbsp
Brown Onion 1 cup
Whole Red Chillies 15-18
Cumin Seeds 1 1/2 tbsp
Whole Coriander 2 1/2 tbsp

Method:
Crack the mutton leg bone from the middle and make deep cuts.
Grind roast red chillies with coriander,cumin and then mix Onion with yogurt salt,ginger
garlic paste,garam msala .Marinate the mutton leg with this mixture and
refrigerate the leg for 8 hour.In a large pot,Slightly heat Cooking Oil on medium heat for 5 minutes.Place the marianted leg in the pot and cook on the medium heat for 10 minutes.
Then lower the flame and cook for 40-45 minutes.Turn the leg on the
other side with the help of 2 big spoons and cook for another 40-45 minutes
on low heat.
Serve with Salad and chatnies.

Method:
In a bowl put together 1/2 kg Lamb meat mince, 1Capsicum, 1 Egg, 1 tsp Black pepper, 1 tsp Crushed red chili, 1/2 tsp Salt, 1/2 tsp Oregano and 1/2 tsp Thyme. Mix well and make long kebab. Now grease an oven proof tray with 1 tbsp oil, put kebab on it, top with 2 tbsp butter and bake in a preheated oven of 200 degrees for 20 minutes. Grill the onion, capsicum, tomato and green chilies, serve with kebab and Naan.

Ingredients:
1/2 kg Mutton

1 cup Oil
1 bunch Sliced cilantro
2 bunches Sliced soya
6 bunches Methi saag sliced
2 Onions sliced
4 Green chilies
1 tsp Turmeric powder
1 tbsp Red chili powder
1 tbsp Ginger garlic paste
1 tbsp Butter
to taste Salt
Method:
Soak 1/2 kg finely sliced spinach, 2 bunches finely sliced soya and 6 bunches finely sliced methi saag with some turmeric powder. Boil soaked vegetables in the same water in which you soaked it. Then blend the boiled mix to form a fine texture. In a cooking pot, add 1/2 kg meat, 1 tsp turmeric powder, 1 tbsp red chili powder, 2 sliced onions, 1 tbsp ginger garlic paste, salt to taste and 2 cups warm water. Grease the pot with oil and allow cooking for some time. When water dries up and oil begins to form a separate layer, add saag, 4 green chilies and 1 tbsp butter. Put on dam for 10 minutes. In the end, sprinkle sliced cilantro and serve with boiled rice.
