Kashmiri Chai
Ingredients
Green tea leaves (pati) 1 & ½ tsp
Green elaichi 3
1 cup cold water
3 & ½ glasses water
Milk 2 cups
Meetha soda ½ tsp
Salt ½ tsp
Condensed milk ½ tin (optional for those who like sweet kashmiri chai)
Crushed pista
NOTE: Whilst cooking this tea, you must use an ‘up down’ movement with the ladle or spoon that you are using to mix or “phaynt” the tea.
Method
Pour 3 & ½ glasses of water into a pan.Add the elachi & bring the water to a boil.Add the tea leaves, meetha soda & 1 glass cold water. Start to mix or ‘phaynt’ the tea. Cook for a while & then add the milk.Keep on mixing the tea constantly.Add the slt & ½ tin condensed milk(optional )Cook the tea for an hour, whilst “phaynt o fying” constantly.
