Aaaj meine Lunch me Haleem banaya tha....
Waise to Haleem ki recipe kuch aur hoti hai aur banane ka tareeqa bhi different,
but meri wali recipe thori si alag hai aur banana bahut asaan..
Lijiye mazrdaar chatpati haleem ki recipe jo mei banati hun...
Ingredients:
Mutton with small pieces.... 1 kg
Haleem rava or Kuta hua gandum...1/4 Kg
(ye bazar me bhi milta ahi ya ghar me bhi thora dardara koot sakte hain)
Moong Daal.....100 gms
Toar daal......100 gms
maash ki daal....100 gms
chana Daal.....150 gms
Oil..................200 gms
Onions........... 3 big size
Dahi.................250 gms
Haldi..........1/4 tea spoon
Garam masala(laung,shah zeera,bari eelaichi,kaali mirch,daar chini)...hasbe zarurat
Adrak lahsan paste..............2 table spoon full
Salt.................As per requirement
Green chilli............100-150 gms
Hara dhanya ,pudina & lemon 4 garnishing
Method:
sabse pahle kutay hue wheat ko aur tamam daalon ko acchi tarha dhokar alag alag bhigakar rakhden..
Ek Fry paan me Oil garam karen aur usme bareek kati hui tamam piyaz ko fry karen till golden brown..
piyaz ko khasta fry karen,jalne na den...aur isko fry pain se nikal kar koi plate me phaila len..
Abb cooker me dhula hua mutton len,usme dahi aur tamam masalay mix karden,sath me hari mirch ko beech se cheear lagakar isi me shamil karden...aur abb jo piyaz tali hui hai usme se aadhi is mixture me mila den..
Cooker ko halki aanch par rakhden....
taqreeban 25 mint baad apka mutton masala tayyar hojaygaa..
Yaad rahe k gosht bilkul tender ho,sakht na ho...
abb isko ek bare pateelay me nikal len aur isi cooker me daalen jo bhigi hui thin usme paani shamil kar k galne k liye rakhden...
daalen pakne me taqreeban 10 mint lagenge...ye mixture bhi bilkul paste ki tarha ho,,achi tarha se mix kar k yh gali hui daalen bhi mutton masalay me mila den...aur Gosht aur daalon ko ekjaan karlen..
phir cooker me jo haleem rava tha usko daal kar galayen,paani bahut sa daalen k yh jaldi se dagh pakarta hai..
iska time bhi 5 se 7 mint hai..............tamam cheezon ko halki aanch p pakana hai...Zyada tez par pakane se haleem ka maza kharab hojata hai...
jab yh rava bhi pak jaye to isko thora sa ghotkar wahi mutton aur daalon me shamil karden..aur is pateelay ko halki anch par phir cahrha den...aur thora sa paani daalkar acchi tarha mix karlen..jab yh sari cheezen mix hojayen to stove band karden.........
Baakhi ki jo piyaz thi aur bacha hua pil thora garam kar k iska baghaar karden..
upar se garam masalay ka thora sa powder chirak den...
sajanay k liye koi bhi bari dish me nikaalaen aur hare masalay aur lemon pieces se sajayen..
Lijiye garma garam Haleem tayyar hai........Ye lemon aur cucumber salad k saath bahut lazeez lagti hai...
